It’s my favorite time of year because it’s full of change and anticipation. Everyday becomes greener and filled with more buds waiting to burst. It brings out the nurturing side in us all as we wait for the arrival of the leaves and begin to see the little seedlings that begin to poke through the dirt. The birds become louder each morning and the peepers peep just a tad deeper each night.

Although I believe there is no s e a s o n for carrot cake because it should be enjoyed all year round, I’ve always associated carrot cake with Easter. This carrot cake was one of my first (successful) creations baking vegan. It’s only sweetened by the carrots and a splash of maple syrup, but tasting it you would never guess it! The cashew-cream cheese frosting ties it all together and makes you not want to share 🥕

On this #internationalwomensday my heart goes to all the women of Ukraine. The women leaving their homes, brothers, fathers, sons, friends, putting on their brave “everything is fine” face, and taking their kids to an unknown country for an unknown amount of time. Leaving a home filled with memories and not knowing what will be left or if they ever return. Also to the women staying in their war-torn country and fighting without a blink of an eye.

These women are gracefully fierce and inconceivably courageous. For the women who left, they now have the task to create a sense of home with nothing but their own love. May seem impossible, but to women that’s just what they do. They make something out of nothing.

To show my support for the Ukrainian women, and all of Ukraine, don’t be surprised to find some goodies at your doorstep. One to keep, and one to pass on to a courageous and brave women in your life. Women are one-of-kind and their strength can never be matched.🌻
